
2019 Chapuis et Chapuis La Bulle

Méthode Traditionnelle Extra Brut. This is a Blanc de noirs made from Pinot Noir. 6 months in tank, then 18 months on lees in bottle. 3g/l dosage at disgorgement. Zero SO2.
Almost blushing pink. Lots of bubbles. Clean with orchard fruits and hints of berries. Very fresh and clean, with amazing balance. Fine bubbles that last forever (this is stable to pour). Strawberry, peach, croissant and a saline finish. Dry, with sweet fruit. Very well made, top notch.
Brothers Romain and Jean-Guillaume come from a wine making family in Aloxe-Corton. In 2009, they created their own domaine, Chapuis Frères. Based in Ladoix-Serrigny, they make classic style wines (still organic) from their family vineyards throughout Burgundy. Apart from Chapuis Frères, the brothers now also have a side project ‘Chapuis et Chapuis,’ in which they are making natural wines from Burgundy, from both their family vineyards. In the last couple of years, they have also (due to poor weather conditions) bought organic grapes from other regions as well.
Romain had spent a considerable amount of time learning to make wine overseas, in particular in Lebanon, New Zealand and Australia, before returning to Burgundy to spend three years working with Philippe Pacalet. And, it was after this that he decided to make his own wine.
The wines are vinified in their new winery in Ladoix-Serrigny. The grapes are fermented on their natural yeasts, without any additives, and are free from SO2. They all see relatively short ageing in old barrels (apart from the pét-nat), and are never fined or filtered.
