2019 Dominique Belluard 100% Pur Jus

RIP Dominique Belluard. A leading vigneron of the Savoie leaving behind a great legacy. 100% Gringet, a traditional grape of the Savoie, of which only 22 hectares exist in the world. Grown in an old glacial valley where the rocks were ground down by the constantly moving ice to form iron-rich soils. Hand harvested on steep, south-facing slopes good for ripening with soil covered in small limestone pebbles with a limestone sub-structure. Direct pressed juice transferred to 600L concrete egg with natural fermentation taking four months. Zero sulphur, pur jus.
