RIP Dominique Belluard. A leading vigneron of the Savoie leaving behind a great legacy. 100% Gringet, a traditional grape of the Savoie, of which only 22 hectares exist in the world. Grown in an old glacial valley where the rocks were ground down by the constantly moving ice to form iron-rich soils. Direct pressed and fermented with indigenous yeasts in concrete eggs for six months. Blended into stainless before bottling. Elegant and mineral, bruised apple, jasmine, smoke. Fascinating.
