
2020 Cabaret des Oiseaux Attraction Chardonnay

Chardonnay grown on their vines in the town St Lothain. The whole bunches are basket pressed and gravity fed into used burgundy barrels for natural fermentation and maturation. The wine is bottled without fining or filtration and no SO2 is added at any stage of the winemaking process.
Reductive with smoke, stonefruit, sea breeze and meadow. It draws you in to take a sip. Quite round on the palate. Quince, pears and salted caramel. This has lots of concentration and substance with lovely acidity and pithy extract. Really enjoyed drinking this wine!
Domaine Cabaret des Oiseaux is the creation of Jude and Lucile Spaety, both agricultural engineers. Jude worked for Celine from le Dolomies and this is how I was introduced to this exciting new producer located in Saint-Lothain since 2017. Cabaret des Oiseaux is named after a plant that grows in their vineyards and which serves as a watering hole for the birds. Jude and Lucile cultivate two hectares of Pinot Noir, Poulsard, Trousseau, Chardonnay and Savagnin. They work their vineyards organically using animal traction and fermented plant extracts instead of copper and sulfur. No SO2 or additives of any kind are used in the cellar. Fermentations are spontaneous from indigenous yeast.
