Dedicated to grandmother Ida, it is the result of pressing the grapes from the vineyard facing south-east. Grapes spend about 15-20 days in concrete tanks on their skins. Spontaneously fermented with indigenous yeasts, in a cement tank for the time necessary to consume the sugars. It is a dry white wine which, after long macerations, expresses great fragrance and structure.
Claudio Campaner at the age of 27, leave Milan and the ‘city life’ to move in Bacedasco Alto, a small village of Castell’Arquato, in the middle of the Piacentini hills, between the Val D’Arda and Val Ongina, on the border with the province of Parma. The land is located in the fossil area of Piacenziano, at an altitude of 250 m asl., on white clays and sandy sediments. Even today, shells of various sizes and shapes can be found after plowing or digging.
At Distina, organic farming and sustainable approach has been taken since the very beginning, following the footsteps of is neighbour/mentor, Massimiliano Croci. The work in the field is only manual. No synthetic products are used and biodiversity is stimulated with total grassing between the rows. Harvest is done by hand in crates, spontaneous fermentation and maceration on the skins of varying lengths (the left over of the maceration are then recovered after racking for distillation and subsequently destined to fertilise the soil in the vineyards), use of neutral containers like concrete and fiberglass. In short, no interference in the natural process from grapes to the must. As well as no filtration, no stabilisation, no clarification and only little sulfur is added if necessary.
