This is a lovely wine! Alice purchased Sylvaner grapes from Philippe Brand in the village of Ergersheim in Alsace which is just a few kilometres directly west of the city of Strasbourg. As always, she and her team harvested the grapes and took them back to the Jura in small crates. The whole bunch grapes underwent 5 weeks of maceration prior to pressing and the wine was then bottled in May 2021. This is a beautiful orange wine with a lovely texture. It is 11% alcohol. The vineyard is in conversion for certification by Agriculture Biologique (AB).
Summary: The grapes were hand-picked and taken back to Alice’s Jura winery. They then underwent semi-carbonic maceration before pressing to fibreglass tanks for natural fermentation and maturation on lees for 6 months. The wine was bottled without filtration or any fining and without the addition of any sulphites.
Alice Bouvot started from scratch in 2004, buying a small cellar in the village of Arbois and a couple of hectares of vines in the hills surrounding. She now farms around five hectares biodynamically and harvests grapes from trusted friends all over France. A highly sought-after cult producer.
