2021 Les & Sez Bien Somersault

WINEMAKER: Tim Stock & Sarah Feehan
VARIETAL: Cinsault
REGION: Barossa Valley, SA
VITICULTURE: Organic/Biodynamic
This wine had us spinning from the start. 100% Whole bunch Cinsault left to its own Carbonic devices for as long as possible. Basket pressed directly to one old barrique. Pale cherry red and surprisingly clear given the lack of attention. Dried red rose with ripe plum and lots of sandalwood spice plus a higher-toned element lurking. The 100% whole bunch is perfectly integrated providing rounded tannins and underlying freshness. While the fruit expression is played down, it references pomegranate, cranberry juice and raspberry cordial. Displays lovely purity despite sitting on the funkier side of the fence. Shows that Cinsault is a very capable variety on its own. Just what we hoped to achieve.
Late nights, sticky ferments and copious bottles are responsible for this love story. Les (Tim Stock from Les Fruits) and Sez (Sarah Feehan from Parley) took time out from their own projects to make three little barrels of wine. Hand picked, hand de-stemmed, basket pressed and barrel fermented, the wine was an experiment in doing as little as possible to create a wild and unadulterated expression of fruit.
