Another newbie, and with this aromatic spicy fruit it really was a no-brainer. 100% Pinot Gris saw just three days on skins, with lots of gusto for extraction, then was drained and pressed. Fermentation was natural with no temperature control. The wine was then matured for three months in combination of 2000L wooden casks and barriques. Unfined and unfiltered.
