2021 Shapeshifter Dark

The Shapeshifter wine project has evolved out of Andrew's connection to the wider Limestone Coast region and to share the terroir of this ancient sea floor of limestone soils which is quite different to the volcanic soils he grows on. Andrew wants to help in the movement of creating a style of wines from the Limestone Coast region working with people he relates to and share his approach when it comes to vineyards and winemaking. They all share a passionate interest in what they are creating or crafting.

Short maceration of Cabernet Sauvignon from the certified organic vineyard in Wrattonbully, Limestone Coast. Fermentation in open vat, a week on skins, and then pressed straight to stainless steel for 3/4 months. A superb refreshing style of Cabernet Sauvignon, juicy texture and dark fruit spectrum. Unfined, Unfiltered and minimum sulphites added.
