"This is made up entirely of local grape Escursac from a young vineyard farmed by his friend Cati Ribot in Santa Margalida and this wine is a collaboration between the two. The grapes fermented as whole bunches for nine days, with the addition of some natural CO2 from another wine’s fermentation, before being pressed off for seven months of rest in old casks. A gorgeous, deep ruby in the glass, this is extremely open and expressive, with soaring notes of mulberries, herbs and brine. Featherweight on the palate, it would make for a wonderful aperitif alongside some sobrasada, black olives and a good hunk of sharp, salty cheese." - Tutto
Eloi Cedo is one of the most influential winemakers on the island of Mallorca. Hailing from Tarragona, he worked in Priorat and Chile before moving to Mallorca to work at 4kilos. His personal project, Sistema Vinari began in 2012 with the cuvee Chateau Pqta, an homage and tribute to his late mother Paquita.
Farming small plots dotted around the island, he works with local varieties, Callet, Manto Negro and Fogoneu which grow on the red, iron rich clay soils known locally as Call Vermell. Eloi farms organically with biodynamic practises and in the cellar works without additions and a deft touch. In 2019 he moved into the cellars of friend Cati Ribot (Ve d’Avior) in the village of Santa Margalida. Together they collaborate to produce Lo Vilero, Callet from Eloi, Escursac from Cati.
