100% Savagnin from a certified BD block in Mclaren flat. Open top skin fermented (50%/ Bunch/50% Destemmed) for about 8 days and pressed to new Austrian Oak foudre. The Savagnin was exceptional quality this year, as you may have tasted in the Bubbles and the Mt. Savagnin. Well, this one takes the cake! Powerhouse of complexity and structure, saline running all the way through, lifted flower components and soft vanilla and spice background noises, Like doing you’re first snowboard descent off of Mont Blanc.
