2022 Gemini Castor

Castor is a wine that I have made almost every year since I began in 2017, and this current release represents the culmination of many years of observation and practice. It is the first time Castor has been made with only Cab Sav, no blending with other varieties (usually merlot in the past), and as such it has immense focus and vividity. Carbonic maceration forms the foundation of this wine and provides the deep, dark bottom end. This element is fermented in stainless steel for around 1 month before being aged in an old barrel for 1 year. Meanwhile the high end comes from rosato, made from the same fruit, direct pressed and aged in a stainless steel tank for 1 year also before being blended, bottled, and then aged for a further 2 years in bottle
