Sustainably dry-farmed 20+ year old vines from a 0.5 hectare site. The grapes are hand harvested, destemmed and go through spontaneous yeast fermentation for 2 weeks in tank with an additional 7 months on the skins in stainless steel with a pass through neutral French oak before bottling. Unfined, unfiltered, low sulfur addition at bottling.
