Trebbiano in semi-carbonic maceration in layers of whole bunches and de-stemmed grapes for 7 days before press. Fermented and aged in demijohns and stainless steel. Other varietals on direct press and fermented in stainless steel.
Remedio is a micro project run by Alessandro Stefani and Michael Carraro, started in 2021. After working in hospitality venues and viticulture around the world, they landed in Marzabotto, just outside Bologna, at the foothills of the Bolognese Apennines, nestled on the edge of the mountain range that connects Emilia-Romagna and Tuscany, a region full of history and culture. Their aim is to create a multi-layered project, involving vines, as well as agriculture and horticulture, to encourage biodiversity. Together they look after 7 hectares of land, half hectare planted with vines, 4h of woodlands and 2.5h of pasture, with the plan of tending more land in the future.
