Both vineyards are cold vineyards, particularly Belmont where we harvested Chardonnay grapes for sparkling (usually one of the earliest picks) after our Cabernet at Bella Luna (usually one of the last picks). Like all of the di Renzo wines we picked the grapes earlier than we would for the Renzaglia Range. The grapes were whole bunch pressed and fermented in a 2000L concrete tank by wild yeasts with occasional lees stirring early in the wines maturation.
