The Les Fruits project sees Tim working with a number of organic and biodynamic vineyards throughout the Adelaide Hills, Barossa and McLaren Vale to craft an extensive range of wines. Ruby comes from one of the Vale’s rare parcels of organic cinsault vines, farmed by Brad Hickey. The fruit here was destemmed and macerated for 4 days before being pressed to barrel for fermentation and a short period of elevage.
