Our style back then was produced with stainless steel ferment, no oak, no malo, no lees stirring – it needed bottle age to develop texture and soften its edges! This time around we wanted to make this wine differently, drawing on our knowledge and love of producing barrel fermented, textural whites. Our aim was to build texture, layers and complexity from the beginning of the winemaking process, but still honouring the fresh bright style we love - and we're very pleased with the result... it's also been a whole lot of fun having it back in the winery! Wine Lifted and aromatic on the nose, you’re immediately greeted with the unmistakable characteristics of this variety – lychee, passionfruit, musk, rosewater. There’s ginger, too and a touch of honey in the mix, with subtle background apricot and spice. On the palate it’s weighty up front with creamy layers, the fine phenolics all carried by the fresh zingy acidity. The finish is pleasingly dry, leaving you ready for another sip. Serve well chilled (6-10C) for the best experience. Drinking nicely at release or give it some cellar time to 2030.
