Siemàn Istà
Istà = translated from their dialect to 'Estate' (Summer). Interpretation of farmhouse ales, traditionally brewed during winter by farmers to quench their thirst on summer's gruelling days of field work.
The beer matures for 5-6 months in oak barrels. During this long maturation, a slow mixed fermentation by indigenous yeast and a small part from a Saison strain yeasts bring freshness, dryness and a low acidity. Bottle conditioned, unfiltered and unpasteurised.
Saison style blonde beer. Rustic and crisp with spicy esters, great dryness and outspoken character.
