Wildflower Serenity #5
REGION: Marrickville, NSW
SIZE: 750ml / ABV: 5.8%
Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love. Serenity is a sparkling mixed culture ale made with NSW grown regenerative organic barley, hopped with Pride of Ringwood hops from VIC and refermented and bottle conditioned with organic sugar
Meesh's tasting notes: A red labelled beverage which is very close to my heart. In the glass, a pale amber with just the right amount of warmth and a big, fluffy white head - almost identical to the beer it draws its inspiration from. Plenty of Pride of Ringwood spicy fruit character on the nose, backed by sweet malt and a pleasant touch of funk. Taking a sip of this beer truly just made me smile. Rounded malt body, good fizz, an assertive bitterness to the back end. Nail on the head sorta stuff. Yum.
It's difficult to overstate the impact of Wildflower since its inception only a few years ago in 2017. Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.
