Côtes du Jura Blanc ‘Savagnin’ is as the name suggests, 100% Savagnin from 30 year old vines on grey Lias marl soils. Fermented in stainless steel then aged for a minimum of 3 years in old barriques in the Château-Chalon cellar. It also includes barrels originally destined for the Château-Chalon vin jaune that do not take the correct voile or aging pathway. This is essentially baby vin jaune but with additional freshness. Less opulent that the ‘Tradition’ it can age 20 to 30+ years and shares flavour profiles with the Château-Chalon.
