This wine is made from direct press Chardonnay from Alice’s vines in the “en Poussot” vineyard (where the soils are rich with limestone) which is quite close to the central Jura village of Arbois.
The grapes were direct pressed and the juice transferred to a fibreglass tank where the natural fermentation using indigenous yeasts took place. The wine matured in the tank for 8 months before it was bottled in September 2019 without the addition of any sulphites. The result is a beautiful wine that is non-oxidative and very fresh. It is a delightful wine with only 12% alcohol.
Alice Bouvot started from scratch in 2004, buying a small cellar in the village of Arbois and a couple of hectares of vines in the hills surrounding. She now farms around five hectares biodynamically and harvests grapes from trusted friends all over France. A highly sought-after cult producer.
