So, piquette hey? Not something we thought we’d be doing, but why not give it a go. Water thrown over Carménère skins and pressed to barrel for ferment. Left on lees for 2 .5 years, with 2021 juice thrown back to get the fizz. It’s fizzy, it’s almost vinous and it’s 7.5%ABV. No adds.
