Hand harvested. They ferment with indigenous yeast in oak for roughly 20 days, and then are bottled before fermentation has completed. Bottled with no added sulphites. High acid, citrus, some toasty brioche, very minerally.
Founding their winery in 1992, Petr and Andrea Nejedlík have been pioneers of the natural wine movement in the Czech Republic. Bordering Austria to the south, 80% of the Dobrá Vinice vineyards are located in the Podýjí National Park, providing the wines with a unique mineral quality as a result of the Palaeozoic bedrock. The wines go through long periods of maceration, and are aged in a mixture of oak, acacia, and amphora.
