80% mondeuse, 20% jacquere, fermented wild and on skins for ten days. Rested in old barrels for ten months, bottled unfined, unfiltered and without sulphur. Wild stuff. Good with a chill.
La Combe aux Rêves (The Valley of the Dreams) is located on the Bugey border, in Revermont, Journans. Since 2009, Grégoire Perron has been working Savoyards and Jurassiens wine varieties on steep plots of old vines. Across two-and-a-half hectares, different plots include Mondeuse, Altesse, Pinot Noir, Poulsard, Chardonnay, Gamay and Geushe Noir. Grégoire produces no more than 5,000 bottles, his philosophy and his knowledge on viticulture guarantee him some impeccable and top calibre grapes. One to try new things and bn experiment each year, he has now produced a small range of wines aged in qvevri in his backyard. No addition, no fining, filtration and no sulphur added.
