
2020 Les Fruits Cassie

3/4rds of a tonne of mixed clone Chardonnay from David Freschi high up at Ashton on the first ridge of the hills. Whole bunch pressed and fermented in aged in 2 barriques. The primary ferment stopped in late Autumn and didn’t complete until December. Bottled April 2021.
Brilliant yellow straw colour with a hint of youthful green. Complex nose but also restrained. Yellow and orange citrus, fresh cut quince and apple, dried white and yellow flowers, gentle spice, freshly almond meal plus a nice mineral freshness from the site. The palate is softer than the nose belies and shows more of the characters of the extended fermentation and 12 months in barrel on lees.
Sweet lemon, pithy yellow nectarine, tending orange skinned citrus on the finish. Dried cream, vanilla spice and crème patissiere. Super textural, first with sheer concentration of flavour and finally pithy phenolics. Looooong and satisfying. A worthy stable mate to the blessed Rudy.
