Sommelier, distributor, now winemaker Dan Simmons can do it all. Balmy Nights is a collaborative project from industry mates looking to make fun, drinkable, minimal intervention wine from organic fruit at approachable prices. Yes chef!
75% sauvignon blanc on skins for 16 days, 25% pinot gris on skins for two weeks, wild ferment without adjustments. Pressed and blended to stainless, rested on lees for five months. Unfined, unfiltered, minimal sulphur at bottling. Juicy, textural and refreshing. Tropical in the best possible way. Good times guaranteed.
