1. 60% whole berry destemmed over 40% whole bunches
2. 6 months on skins. Pigeage 3 times daily for 3 weeks before being locked down with cherry-wood smoke for a further 5 (and a bit) months.
3. Free-run only racked to a single, third fill, FF VTG HT puncheon
4. 12 months elevage with “once-a-month” battonage and no topping.
5. Bottled November 2021 under nitrogen
