Manuel Moraga Gutiérrez's 16-hectare estate has been dry-farmed organically for seven generations, with very old, pre-phylloxera vines on volcanic soils, some over 250 years of age. This is 100% País, destemmed manually using a traditional bamboo zaranda and fermented in open-topped raulí lagars, or native pink oak foudre, before the free run juice is transferred into raulí pipas (barrels) and rests on fine lees for several months. Zero sulphur. Fresh, bright and crunchy. A little wild. Chuck it in the fridge. Also, 1L bottle. Good times guaranteed.
