Allowed to roughly settle overnight then transferred to a mixture of sized French oak of which 25% were new. Full natural long slow fermentation in barrel. Full malo in barrel also. 12 months in oak and a further 3 months in tank to settle on gross yeast lees. Not filtered or fined - just a small so2 addition prior to bottling.
Cobaw Ridge was established in 1985 by Alan and Nelly Cooper. Vines were planted on granitic, sandy soil in the cool climate Macedon Ranges, on the cusp of the Great Dividing Range at some 610m. Their positioning, in a natural amphitheatre, provides the perfect place to produce terroir-driven wines.
