
2021 Cobaw Ridge Pinot Noir

Picked over three separate days to separate the different clones ripening patterns. 29/3, 7/4 and 11/4 - ripeness levels between 11.9 be to 13 be Approximately 1/3 of the fruit was from our multi clonal high-density planting (7000 v/Ht) 10% whole bunches places at base of small open fermenters and the balance fully destemmed on top. Gently pumped over for a few days then plunging once natural fermentation had commenced. Basket pressed after 3 weeks on skins. Settled in tank, then transferred to small French oak, 25% of which were new. 12 months in barrel and full natural malo during maturation in oak. Not filtered or fined - just a small so2 addition prior to bottling.
Cobaw Ridge was established in 1985 by Alan and Nelly Cooper. Vines were planted on granitic, sandy soil in the cool climate Macedon Ranges, on the cusp of the Great Dividing Range at some 610m. Their positioning, in a natural amphitheatre, provides the perfect place to produce terroir-driven wines.
