"These wines are made using fruit from a farm called Minko on the Southern Fleurieu Peninsula, grown organically in a relatvely remote area, not far from the Southern Ocean. Each variety is from a north facing vineyard that in 2021 enjoyed a very warm and sunny ripening period that allowed the vines to develop fullness and complexity, while still retaining a saline minerality due to their growth in deep sandy soil.
Direct pressed and allowed to ferment oxidatvely, then aged in old barrels. Left un-topped and on lees for 8 months before being bottled at the beginning of Summer. No added sulphites, no fining or filtraton. Further aged in bottle for 18 months." - Simon
After years of working with the legendary Tim and Monique at Manon, Simon now makes his own wine out of the same shed as the wonderful Travis Tausend. Legends left, right and centre, really. Organic fruit, zero adds, pure and ethereal wines. A winemaker to watch!
