"Tejat was essentially born as a thought experiment which ended in many years of required patience. It has sat silently in the cellar waiting for the moment when all of its disparate parts finally coalesce. It still has some sharp edges and may seem challenging to some, but the balance and stability achieved through extended aging in bottle is there. Whole bunches of gris underwent carbonic maceration in a stainless steel tank for around 2 months before being pressed and aged in a single old barrel. Bottled in late 2021 this has now had 3 years in bottle." - Simon
After years of working with the legendary Tim and Monique at Manon, Simon now makes his own wine out of the same shed as the wonderful Travis Tausend. Legends left, right and centre, really. Organic fruit, zero adds, pure and ethereal wines. A winemaker to watch!
