Ancestral Method, 50% Fiano, Chalmers Vineyard, Heathcote, destemmed, wild ferment on skins for 3 days, pressed to tank, 50% Greco, Willoughby Bridge Vineyard, Heathcote, destemmed, on skins for 2 days, pressed to barrel and tank, blended and bottled before end of primary ferment, coarsely hand disgorged after 6 months, unfined, unfiltered. Bright, fresh and tropical with pineapple and rockmelon, lovely moussey bubble, fishing dry and lemony.
