"Around 60% Chardonny and 40% Sauvignon Blanc from the Top Range vineyard on the edge of the Adelaide Hills GI. Organic farming. Hand harvesting with sorting in the vineyard.

Brilliant golden straw. Great clarity from the natural settling. Unashamedly inspired by the blended white appellation of Cheverny in the Toiraine, Loire Valley. Of course, nothing like the real thing but a consistent idea thread. Importantly the expressions of the two varieties are seamlessly blended. Bright orchard fruits of apple and quince with a little perfume of dried yellow flowers. Softly textured from its long tank aging on fine lees, a little savoury reduction replaces the Loire’s minerality, citrus pith and yellow apple fruits. Slippery with a savoury edge from the pithy fruit expression." - Tim Stock
