"Every now and then, some hip young cellarhand will throw down a challenge, and we winemakers are honour bound to beat them at their own natty game (it's on page 127 of the handbook, check if you don't believe me). Proof that you don't need a beard to make pet nat can be found within this bottle. Open with care.

With an abundance of riesling fruit in 2021, we took the opportunity to conduct a number of different experiments. The zippy acid line in this fruit just screamed sparkling, so sparkle it we did. During a slow, cold ferment in tank, we watched this wine like a hawk so we could bottle it when it had 20g/L sugar remaining. The wine was then bottle conditioned for 7 months to chew through that last little bit of sugar and turn some regular riesling into a sparkle party.

Pet Nat riesling - zinging nose of green tropical fruits, stones and lees and crushed herbs. Palate is full and almost exotic on the front before finishing dry and salivating as you find the stones and granite waiting on the back palate. Another glass please."
