Inspired by Panevino, Olek decided to make a "torchiato" , a wine using the juice coming out of the pressing of the pomace after fermentation of all red wines (Barbaresco, Barbera, Dolcetto, Pelaverga, - obviously at different times). The result is a structured and elegant wine, so recognisably "Olek".
Polish champion snowboarder Olek Bondonio has quietly established a cult following from his old farmhouse in Barbaresco. He farms three and a half hectares amongst the region's top crus, utilising indigenous yeast fermentation and minimal intervention.
