An orange wine of time and patience, partly in barrel but mostly locked up in tank on skins for 11 months, meandering well into the savoury realm that these wines want to take you. All about the herbal notes and Earl Grey Tea wrapped in delicate tannins. Surprising softness and well worth the wait. Coulda been something in the glass quicker maybe? But that wouldn’t be this. Love the slow road.
Getting the chance to work in the illustrious Borachio winery as head of cleaning, pressure washing, Hilux driving and bovine nourishment, the wines came about after seeking out new parcels of fruit from nearby growers, before claiming squatter’s rights over a corner of the shed. It’s a beautiful grey area and the perfect stitch up. PÓŹNO. It’s Polish for late. And the wines are always worth the wait.
