Vin De Soif is a small-batch project from Alistair Blackwell and Tobias Ansted inspired by Rhône. Sourcing certified organic fruit from single-site vineyards in Heathcote planted on Cambrian soil, an igneous rock pushed up by a volcanic thrust approx. 500 million years ago. Fresh, drinkable wines with a focus on the expression of terroir.
50% viognier, 40% marsanne, 10% riesling. Hand harvested and whole bunch pressed to stainless, cold soaked and naturally fermented long and slow before bottling. Textural and grippy with generous fruit, refreshing acidity and great length. Impressive debut.
