Nicolas’s love for wine began at a young age, but he first pursued a career as a jazz pianist until he saw an advertisement for a degree in viticulture and oenology and decided to trade scales for secateurs. In 2005 he met and married Sylvie Augereau, the great French wine writer and founder of La Dive Bouteille. She introduced him to the world of French natural wine and its champions—Marcel Lapierre chief amongst them—inspiring Nicolas to begin farming organically and biodynamically and to make wine without artifice. | In 1998 Nicolas took over a 28ha estate in Anjou. After three years of analysis, he culled 23ha, retaining only the 5ha clos. He has since acquired two hectares. Ferments are wild, no adjustments are made, nor does he fine or filter. Sulphur is applied by cuvée and vintage and only at bottling.
