Vitovska is a classic white grape of the Carso and Istria regions. The vicinity of the sea gives vibrance and freshness to the wine. The wine is hand harvested in small baskets, macerated on the skins for 36-48 hours and fermented with native yeast. Basket pressed and after aged six/seven months in stainless steel containers. Bottled unfiltered.
White apricot and yellow flowers nose. Delicate flavours of sage and hay. Still, tons of freshness and solid structure in the palate. Saline finish. Wine to contemplate in a big glass.
Giorgio Nicolini is a small family-run farm, based on old traditions inherited from grandparents. Their effort is devoted to regenerating and replanting the old types of native vines, now almost completely lost, using the original centenary clones from their own vineyard. The two hectares of vines are situated on the hills above the town of Muggia, old venetian colony, in the outskirts of Trieste. In front, the sea of the Gulf of Trieste, on the other side, Slovenia and Croatia borders are steps away. The vines are 20/30 years old and they grow manly in clay with marine sediments.
