Old vine Sémillon nurtured organically by Fiona Wood in her own vineyard in Mc Laren Flat. The Vines grow just below a Fauna & Flora Reserve on a gentle slope facing straight south on deep sand over clay soil. The Semillon grapes were picked by hand & whole bunch pressed in our screw press for a gentle & phenolic pressing style. After pressing, the Semillon juice settled overnight and got racked clear off its gross lees to start a clean & steady fermentation in Stainless Steel.
The Sauvignon Blanc was hand picked about a month later from the later ripening organically farmed Magpie Spring vineyard which produce a really fragrant & balanced grappes on dark loam on clay soils. The Sauvignon Blanc underwent the same winemaking as the Semillon & the two got blended together after they both achieved alcoholic & malolactic fermentation. Elevage in stainless steel for 7 month & bottled on site in our Basket Range winery without fining nor filtration.
After accumulating years of experience from various fermentation, farming & hospitality work around the world, Jean-Baptiste Courdesses started in 2019 to hand make wines exclusively from organically farmed grapes, focus on regenerative practices & made naturally without any additions, fining nor filtration but only grape juice. Our small scale winery is based in Basket Range, Adelaide Hills. We farm our vineyard according to a strict organic method & purchase fruits from like-minded trusty viticulturist to craft wines only from the highest quality grapes. Based on intuitive reaction & natural instincts decisions, our wines reflect the landscape & the character of the grape varieties only permitted by a farming respectful of the environment, the fauna & flora.
