2025 Momento Mori Someday Never Comes

Someday Never Comes is 100% Sangiovese from the Chalmers vineyard on the rocky slopes of Mt Camel. The soils are ancient Cambrian volcanic and are comprised of dolerite, green jasper and ironstone to name a few.

I first used this fruit in 2022 and made one small tank of it. That tank ended up in the 2022 True Love Waits. I so was enamoured with that single tank of Sangiovese then that I knew I had to make a single varietal wine from it sometime in the future.

The soils here work so well for these red Italian varietals, The wines always have such a volcanic, mineral drive with super fine tannins which create incredible structure.

This wine is savoury and complex . It’s got fruit upfront but then the acid line and tannin profile really shine through. It’s polished but rustic at the same time. It was intentionally a low extraction ferment to keep it on the lighter, more playful side. Elevage in stainless steel to keep things fresh !
