Domaine Achillée Quetsches Alors Plum Pétillant (2018) 750ml Bottle
The Dietrich family has farmed land in Alsace since 1600, working organically from 1999 and biodynamically from 2003. Achillée is the name for yarrow, a plant used in biodynamic farming and one that grows abundantly on the Dietrich family’s vineyards. Fun fact - their cellar is the largest building in Europe made out of straw. As well as their vineyards, the domaine has six hectares of fruit trees. Biodynamic plums are macerated and foot trodden, the juice is fermented naturally, followed by secondary fermentation in bottle with a liqueur from riesling grapes. A little bit lambic, a little kombucha, a whole lot of fun. Please open gently, real cold, over the sink - IT'S A DOOZY.
