"This mixed fermentation Saison was aged in our oak Foeder. It displays a complex mixture of hop derived melon fruit aroma with sour fruit characters owing to the mixed culture fermentation; which includes Lactobacillus, Pediococcus and Brettanomyces. The textural flavour profile is soft and delicate, with pear and honeydew melon leading into funk and a lacto sour tang that provides a refreshing finish.
To fully integrate a fresh hop profile into this aged beer we used a fairly unique hopping method. Rather than dry hopping the finished beer we brewed a small batch ale, using similar hopping methods to when we brew juicy/hazy pales (with a low bitterness). We then blended this fresh juicy ale with the aged Saison before packaging, which makes for a delicate and unique beer." - Head Brewer, James
