55% Sous Voile Chardonnay; 25% Sous Voile Sauvignon Blanc; 20% 6 year old solera white blend. James Madden has created something truly unique with Forever Still. The blend of organic grown Adelaide Hills Chardonnay and Sauvignon Blanc, combined with a 6-year-old solera of whites, is a complex and layered wine. Forever Still is a multi-faceted and textural wine, balancing complexity with refreshing acidity. The aromatic profile tantalises with hints of mountain alpine spice, intertwined with notes of almonds and quince. On the palate, there’s saline, lemon flesh and cashew cream. The finish, more nuttiness and gentle herbal spice. An adventure for the palate, a wine that is both refreshing and intellectually stimulating. Forever Still is not only a testament to James Madden's creativity but also a celebration of his winemaking journey from the first vintage to the present.
Sommelier-turned-winemaker James Madden has worked with the likes of James Erskine (Jauma) and Tom Shobbrook. He now shares a shed in the Basket Range with Alex Schulkin (The Other Right) to produce his own minimal intervention wines. All grapes are organic and/or biodynamic, handpicked and processed by shovel & fork. Wines are transferred by siphon using gravity, unfined, unfiltered and always zero adds.
