Ziggy's Native Ginger, Wild Dandelion & Magnolia Petal Shrub
Wild Dandelion flowers and roots - picked and dried. Magnolia flower petals pickled in vinegar, and then fermented with honey. Native Ginger is the secret addition - both leaf and root are dried and steeped during the fermenting time. Combined with the most aromatic of dark spices - this is warmth in a bottle.
What is a Shrub? It is a concentrated 17th Century-era preservation beverage that combines fresh fruit, sugar, and vinegar. The result is a sweet yet tantalisingly acidic drop that can be enjoyed on its own or used in mixed drinks. An excellent way to add zing to fresh beverages or cocktails. Pair with a splash of soda or ginger beer and fresh apple, or dash it with tequila, mezcal, whiskey, or vodka.
Wildflower Common Ground Autumn Ale: Harvest 2020
The third edition in our ongoing collaborative project with Dane and Hannah of Momento Mori wines. These beers are made without the addition of our house culture and instead see uninoculated wort pitched on top of fermented, macerated, pressed grape skins from the making of their wines.
Hanssens Artisanaal Oude Gueuze (750ml)
Hanssens Artisanaal is one of the oldest lambic blenders in Belgium dating back to 1871. This is their OG gueuze. Top of the pops.
2021 Vini di Giovanni Vermentuzzo
100% vermentino with some skin contact. Ripe stone fruits, almost tropical but insanely fresh and driven with a saline minerality. Texture for days. Spectacular, best vintage yet.
2020 Gemini Merlot
Fruit from unpruned vines, wild grown, Basket Range, Adelaide Hills - organic (not certified). Picked with friends and family from an abandoned vineyard, it was stolen fruit essentially! A one off wine, never to be repeated haha. Bottled early 2021. No added sulphur.
