The Character of Chablis

Grown in the cool, northernmost reaches of Burgundy, Chablis is made entirely from Chardonnay — but don't let that fool you into expecting butter and oak. True Chablis is lean, flinty, and alive with citrus and green apple. The region's Kimmeridgian limestone soils — packed with ancient marine fossils — lend the wine a distinctive saline, chalky quality that makes it one of the most food-friendly whites in the world.

A Premier Cru Chablis alongside freshly shucked Pacific oysters is a pairing so elemental it borders on geological — salt meeting salt, sea meeting sea.
