The SPÖN Table: A Wine-Bar Night at Home

The best evenings don't always begin with a reservation. Sometimes they begin with a bottle you've been saving, a few good things from the pantry, and someone you want to spend a little longer at the table with.

That's the idea behind the SPÖN table. Not a dinner party with a timetable. Not a grazing board built for a photograph. Just a generous little spread, something lovely in your glass, and room for the evening to find its own pace.

Start Small. Choose Well.

You don't need a dozen dishes. Choose a handful of things that bring different textures and flavours to the table: something briny, something rich, something crisp, and something fresh.

Think anchovies, olives, a favourite cheese, a terrine or rillettes, crackers or good bread, and a few radishes or slices of cucumber. Put them in bowls you like. Leave space between the plates. You can always bring out a little more later.

Something Briny

Olives are an easy place to begin. Our Molives Oregano & Garlic Olives or Manzanilla Lemon Stuffed Olives offer two starting points for your spread. Tip them into a small bowl and put another beside it for the stones.

For anchovy lovers, Delicius Cantabrian Anchovies deserve their own little plate. Serve them simply on bread with a thin swipe of butter, or let guests help themselves. You don't need much to make a bite feel like an occasion.

If you'd rather build the table around a tin of fish, La Curiosa's Caballa Canalla Mackerel with Curry & Chilli is another option from our pantry range. Give it some bread and a little space of its own, especially if you're serving more delicate bites alongside it.

Make Room for Cheese

A little cheese turns a few snacks into a table worth lingering over. Choose one or two favourites, or make a small tasting plate from our in-store range: Blue Danish Cheese, Woombye Cheese Camembert, Woombye Cheese Blackall Gold Washed Rind, and Barossa Cheese Co. La Dame Goat's Milk.

For a simple plate, start with the Woombye Camembert and add the Blue Danish for contrast. If you feel like exploring, bring in Blackall Gold Washed Rind and La Dame Goat's Milk, giving each its own little space and knife. You don't need all four to make it feel generous.

Serve with bread or plain crackers, and a little quince paste on the side. Keep the accompaniments simple so guests can try each cheese on its own before building their favourite bite. Follow the cheeses' storage and serving guidance, and bring out modest portions rather than leaving the whole supply on the table.

Something Rich

Pork rillettes or rabbit terrine make the spread feel a little more substantial without turning it into a cooking project. Our La Mère Lalie range gives you both options.

Spoon the rillettes onto a small plate or serve the terrine in slices, following the storage and serving guidance on the jar. Add cornichons or another sharp little pickle, and let people assemble their own bites. It's a good excuse to keep passing the bread.

Something Crisp, Something Fresh

Crackers are more than a vehicle. They bring a welcome crunch between richer bites. Keep them simple: Barossa Cheese Co Plain Crackers or Captain's Table Water Crackers let the other ingredients take the lead.

Then add something fresh. Radishes, cucumber, a handful of cherry tomatoes, or a little salad dressed just before serving. It needn't be elaborate. A small change in texture can make the whole table feel more generous.

Choose the Bottle Around the Evening

Rather than trying to find one perfect match for every plate, start with what you and your guests enjoy drinking. Is this a white-wine evening? Something pink? A red you can linger over?

A crisp white is a useful starting point for a table led by seafood and salty snacks. Rosé makes an easy centrepiece for a mixed spread. If terrine and rillettes are doing the heavy lifting, consider a lighter red. Think of those as starting points, not rules.
